Calming Purple Fungus Soup (w not-Bitter Fritters)

So, weird name but ‘Calming Ube & Snow Fungus Soup’ was slightly too long for the header.

Call this whatever you’d like, it’s much more poetic in person than in text! If you follow my instagram, you may recall that a few weeks ago I was feeling very frayed and wanted to take some time away from social media. In that time, I figured I’d tend to my nervous system by focusing on eating medicinal foods- or at least more than usual.

The first recipe I put together was this gorgeous and soothing soup. From the start, it was as satisfying to me as the ‘Eternal Rose’ version of white fungus soup I’ve been playing with for years; an instant hit. What I look for is the combination of incredible sensory action and practical medicinal quality, and this soup absolutely has it. It can be eaten as a breakfast, sure, but there are also no actual rules for foods. Eat this whenever you want to. It’s incredibly kind to the system and fairly simple to put together if you have the ingredients on hand.

Medicinal Qualities:

Tremella, or White Fungus, also known as Snow Fungus, is readily accessible at most Asian groceries and is an immune-boosting, inflammation-lowering, genuine plant source of collagen, so it supports healthy tissue elasticity and regeneration. The calming lavender hue of the soup comes from Ube, or purple sweet potato, which offers satisfying and gut healthy (which means mood healthy!) fiber as well as loads of proanthocyanidins; polyphnol antioxidants which reduce oxidative stress on your cells and are known to have an anticancer effect in the body. Butterfly Pea backs the color and also includes these same antioxidants! The addition of nutty ingredients offers protein and nerve-tissue loving healthy fats and the sweet aroma of lavender offers powerful mood-stabilizing benefits.

This dish is an entire counter, offering satisfying mouth feels from jelly fungus, tapioca and crunchy nuts, soothing aromas, beautiful calming color and mild sweet flavor.
